A bright, tangy homemade Greek dressing made with olive oil, lemon, garlic, and oregano. Perfect for salads, roasted vegetables, or as a marinade. Ready in 5 minutes!

Ingredients

  • 11/2 cup extra-virgin olive oil
  • 23 tbsp red wine vinegar
  • 31 tbsp fresh lemon juice
  • 42 cloves garlic, minced or pressed
  • 51 tsp Dijon mustard
  • 61 tsp dried oregano
  • 71/2 tsp sea salt
  • 81/4 tsp black pepper
  • 91/4 tsp dried basil (optional)

Instructions

    Add all ingredients to a small jar with a tight-fitting lid.

    Shake vigorously for 30 seconds until well combined and slightly emulsified.

    Alternatively, whisk all ingredients together in a small bowl until combined.

    Taste and adjust seasoning as needed - add more lemon for brightness or salt to taste.

    Use immediately or store in the refrigerator for up to 5 days.

    Shake or whisk again before each use as the oil will separate.
