Vibrant coconut green detox soup.

Ingredients

  • 13 cups kale, chopped
  • 22 cups spinach
  • 31 cup broccoli florets
  • 41 3/4 cup cooked chickpeas (from 3/4 cup dried, organic)
  • 51 cup cooked lentils
  • 62 tbsp olive oil
  • 71 3/4 cup organic coconut milk (carton style)
  • 86 cups vegetable broth
  • 93 cloves garlic, minced
  • 101 medium onion, diced
  • 111 tsp sea salt
  • 121/4 tsp black pepper

Instructions

    Chop all vegetables into roughly similar-sized pieces to ensure even cooking.

    In a large pot, sauté onions and garlic in olive oil until fragrant and translucent.

    Add chopped vegetables, beans, lentils, and vegetable broth, then simmer until vegetables are tender.
