Nourishing lentil soup with kale-turmeric.

Ingredients

  • 11 1/2 cups lentils, rinsed
  • 23 cups kale, chopped
  • 32 cups spinach
  • 42 medium carrots, diced
  • 51 medium onion, diced
  • 63 cloves garlic, minced
  • 72 tbsp olive oil
  • 86 cups vegetable broth
  • 91 tsp ground cumin
  • 101 tsp ground turmeric
  • 111 tsp sea salt
  • 121/4 tsp black pepper

Instructions

    Rinse lentils and chop all vegetables into small, uniform pieces.

    Heat olive oil in a large pot and sauté onions and garlic until fragrant.

    Add chopped vegetables and lentils to the pot, then pour in vegetable broth.

    Bring the soup to a boil, then reduce heat and simmer until lentils are tender.
