  • 11 1/2 cups red lentils, rinsed
  • 22 medium carrots, diced
  • 31 medium onion, diced
  • 43 cloves garlic, minced
  • 51 3/4 cup organic coconut milk (carton style)
  • 66 cups vegetable broth
  • 72 tbsp olive oil
  • 81 tsp ground cumin
  • 91 tsp ground turmeric
  • 101/2 tsp ground coriander
  • 111 tsp sea salt
  • 122 tbsp fresh lemon juice
  • 132 tbsp fresh cilantro for garnish

Instructions

    Sauté chopped onions, garlic, and carrots in a large pot until softened and fragrant.

    Add red lentils, vegetable broth, and your chosen herbs and spices to the pot.

    Simmer the mixture on medium-low heat, stirring occasionally, until lentils are tender and breaking down.
