Zesty avocado chimichurri on cucumber.

Ingredients

  • 12 large cucumbers, sliced into 1/4-inch rounds
  • 22 ripe avocados, diced
  • 31/2 cup fresh parsley, finely chopped
  • 41/4 cup fresh cilantro, finely chopped
  • 53 cloves garlic, minced
  • 63 tbsp red wine vinegar
  • 71/4 cup olive oil
  • 81/2 tsp dried oregano
  • 91/4 tsp red pepper flakes
  • 101/2 tsp sea salt

Instructions

    Finely chop parsley and garlic to make chimichurri sauce.

    Mix chopped herbs with vinegar to create a tangy herb sauce.

    Slice cucumber into thin rounds and arrange on a serving plate.

    Slice avocado and place pieces on top of cucumber slices.
