Healthy Options for Patriotic Desserts

Ingredients to Have on Hand

  • Coconut flour
  • Almond flour
  • Einkorn flour
  • Maple syrup
  • Healthy M&M's
  • Red and blue fruits
  • Monk fruit sweetener
  • Turbinado sugar

Chickpea Cookies

Ingredients

  • 15 oz cooked chickpeas
  • 1/2 cup sunflower butter
  • 1/2 cup maple syrup
  • 1/4 cup turbinado sugar
  • 2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup M&M's (blue and red)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Blend chickpeas and sesame seed butter for 1 minute.
  3. Add maple syrup and vanilla. Blend 2-3 minutes until smooth.
  4. Fold in candies.
  5. Bake 12-14 minutes.

Trifle in a Glass

Ingredients

  • Organic cherries
  • Blueberries
  • Fresh lemons
  • Turbinado sugar
  • Yellow cake (recipe below)
  • Fresh whipping cream

Instructions

  1. Wash berries. Squeeze lemon juice over blueberries and chopped strawberries.
  2. Set aside for 10-15 minutes.
  3. Layer cake cubes, then strawberries, then whipped cream.
  4. Top with blueberries.

Yellow Cake Recipe

  • 2 cups einkorn flour
  • 1 stick butter
  • 1 cup turbinado sugar
  • 2 organic eggs
  • 1-1/4 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup coconut milk
  • 2 egg whites, whipped stiff

Cream butter and sugar together. Add eggs one at a time. Add vanilla and milk. Fold in flour, then fold in egg whites. Grease a 9" pan and bake 40-45 minutes at 350 degrees F.

Watermelon Pizza

Ingredients

  • 1 slice watermelon (1 inch disc)
  • 3 tbsp cream cheese
  • 3 tbsp heavy cream
  • 1/4 cup monk fruit sweetener
  • 2 tsp lemon juice
  • 1/2 tsp vanilla
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • Fresh mint

Instructions

Blend the cream cheese, heavy cream, monk fruit, lemon juice, and vanilla until smooth. Drizzle the cream mixture over the watermelon slice. Top with blueberries, raspberries, and mint. Cut into 8 slices and serve.

Fruit Flag Tart

Dough

  • 4 oz cold butter
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 12 drops monk fruit
  • 2 tsp gelatin
  • 1 tsp vanilla

Form dough into 10 balls and press into 2.5" circles. Bake 14-16 minutes at 350 degrees F.

Topping

  • 3 oz cream cheese
  • Monk fruit sweetener to taste
  • Heavy cream
  • Vanilla

Mix the cream cheese topping ingredients until smooth, spread over cooled tart shells, and top with fresh berries arranged in a flag pattern.
