Roasted Garlic Lemon Artichokes
Whole artichokes roasted with garlic, lemon, and olive oil until melt-in-your-mouth tender.
Ingredients
- 1 2 whole artichokes
- 2 1 lemon, halved
- 3 2-3 Tbsp extra virgin olive oil
- 4 Sea salt, to taste
- 5 Freshly ground black pepper, to taste
- 6 2-4 garlic cloves, peeled and smashed
- 7 1/2 cup water or vegetable broth (for the pan)

Preheat oven to 425F.

Prepare: Trim the bottom stem and cut off the top 1/3 of each artichoke. Remove inner center leaves. Gently pull outer leaves open.

Season: Squeeze lemon juice over artichokes. Drizzle with olive oil. Season with salt and pepper. Stuff centers with garlic cloves.

Roast: Place artichokes cut-side up in a covered baking dish. Pour 1/2 cup water or broth into the bottom.

Cook: Cover with a tight-fitting lid and roast for 60-80 minutes, until very tender.

Optional: Remove lid for the last 10 minutes to lightly caramelize the tops.

Serve warm with extra lemon if desired.
