Curried Cabbage & Ground Meat Skillet

A one-pan curry-spiced skillet with cabbage and your choice of ground meat.
Ingredients
- 1 1 Tbsp ghee (or olive oil, avocado oil, or tallow)
- 2 1 small onion, diced
- 3 Kosher salt, to taste
- 4 1 lb ground meat of choice (beef, pork, lamb, bison, turkey, or chicken)
- 5 1 Tbsp curry powder
- 6 1/4 tsp freshly ground black pepper
- 7 1 lb green cabbage, thinly sliced
- 8 2 Tbsp fresh lime juice
- 9 1/4 cup fresh cilantro, minced
- 10 2 scallions, thinly sliced

Heat a large cast-iron skillet over medium heat. Add ghee and swirl to coat.

Add diced onion and a light sprinkle of salt. Cook until soft and translucent.

Add ground meat. Break it up and cook until no longer pink.

Sprinkle in curry powder, black pepper, and additional salt. Stir well.

Add sliced cabbage. Cover and cook for 2-5 minutes, until cabbage softens.

Add lime juice. Taste and adjust seasoning.

Top with cilantro and scallions. Serve warm.
