A smooth, creamy soup with cauliflower, coconut milk, and warming turmeric.
Ingredients
- 1 3 cups coconut milk
- 2 1/2 cup bone broth
- 3 1 tsp mild curry powder
- 4 1 cup chopped onion
- 5 3 cloves garlic, minced
- 6 1 Tbsp extra-virgin olive oil
- 7 6 cups cauliflower florets
- 8 1 cup diced carrots
- 9 1 turmeric nib, finely grated
- 10 1/2 tsp sea salt

In a large pot, heat olive oil over medium heat. Add onion, garlic, grated turmeric, and curry powder. Saute until soft and fragrant, about 10 minutes.

Add cauliflower, carrots, bone broth, sea salt, and coconut milk. Cover and simmer until vegetables are very tender, about 30 minutes.

Blend the soup in batches until smooth and creamy. Adjust consistency as needed.
