Creamy Basil Avocado Zoodles

Ingredients 8
- 1 large ripe avocado
- 2 cups fresh basil leaves
- 1/4 cup hemp seeds
- 1 garlic clove
- Juice of 1 lemon
- 1 Tbsp extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 4 cups zucchini noodles
Method

Make the sauce: Add avocado, basil, hemp seeds, garlic, lemon juice, olive oil, salt, and pepper to a food processor. Blend until completely smooth and creamy.

Combine: Pour the sauce over zucchini noodles and toss gently to coat evenly.

Serve: Serve immediately as a fresh dish, or warm gently in a large pan over medium heat for 2-3 minutes.
